SHORTBREAD COOKIES

I love these cookies! We used them in place of the graham crackers for s’mores Friday night! I hope you enjoy them!

Shortbread Cookies

Serves 2-2 1/2 dozen 

Ingredients:

2 1/2 cups flour

1/4 tsp. salt

1/2 tsp. baking powder

3/4 cup sugar

1/4 cup shortening

2 tsp. vanilla extract

1 stick butter (cold)

1 egg

Instructions:

Mix the flour, salt, baking powder, and sugar together and then add in the shortening, vanilla, butter, and egg and mix it in. It will take a few minutes to mix together. When the dough is formed, make it into a log and wrap it in plastic wrap and refrigerate. After about at least an hour preheat the oven to 350 degrees, and cut the log into circles. Place them on cookie sheet and bake for 12-18 minutes. If you want to cut out shapes them roll them out on a floured surface. Enjoy!

Note:

Depending on how hard or soft you want the cookies, just keep and eye on them after about 5-8 minutes. I like them on the harder/toasted side so I went about 18 minutes.
