Gluten Free Chocolate Muffins

These muffins are so good! They taste just like cake. I know you are probably thinking, "Do they really taste like cake or are you just saying that?" Because sometimes gluten free recipes don't taste like what they are advertised as. But these? They are really good, moist, and taste just like cake! Here is how to make them.




(Dry Ingredients)

1 cup Almond Flour (just ground almonds)

3 Tablespoons Milled Flax Seed

1/2 Teaspoon Salt

1/2 Teaspoon Baking Soda

1/2 Teaspoon Baking Powder

1 Teaspoon Xantham Gum

1/2 Cup Tapioca Flour

1/4 Cup Cocoa Powder 

(Wet Ingredients)

1/2 Cup Oil

4 Eggs

2 Teaspoons Vanilla

1/2 Cup Sugar


3/4 Cup Chocolate Chips


Preheat oven to 350 degrees. Whisk all the dry ingredients together and set aside. Next, in a separate bowl add the oil and sugar together and mix well. Then add in the eggs, one at a time, mixing between each egg. Add the vanilla. Fold the wet ingredients into the dry and then fold in the chocolate chips. Don't over mix it. Scoop into greased muffin tins and bake for 15-20 minutes or until a toothpick comes out clean. Enjoy!!
