Apricot Pork Loin

Apricot Pork Loin

This pork loin recipe is so tender and packed full of flavor! So good. Here is how to make them...

Here is what you need: Pork chops, red wine vinegar, olive oil, apricots, and minced garlic.

Add all the ingredients (except the pork loin) into a saucepan and cook on medium heat for about 10 minutes or until bubbly. While the sauce is cooking, spray a roasting pan and place the pork loin into it. Then season both sides with a generous amount of salt and pepper. Set aside.

It will look like this when it is done.

Then pour the sauce over the pork chops. 

Making sure to spread the apricots all over the surface of the meat. Bake at 425 degrees for about 30 minutes. It will be between 155-160 degrees when it is fully cooked. Let rest 5 minutes. Enjoy!

APRICOT PORK CHOPS

Serves 8

2 lb pork loin

1 1/2 c dried apricot, chopped

1/2 c olive oil

1/2 c red wine vinegar 

1 T garlic, minced 

1 tsp. salt (1/2 tsp for each side of meat)

1 tsp. pepper (1/2 tsp for each side of meat)

Pour the sauce all over the pork loin, making sure to spread the apricots all over the surface of the meat. Bake at 425 degrees for about 30 minutes. It will be 155-160 degrees to be fully cooked.
